Do you hate the idea of eating a healthy salad for lunch? I started eating salads, when I was trying to loose weight after having a baby. In my early to late twenties, I was lucky enough to eat anything I like and I will not put on any weight! However, towards late twenties, I realised my metabolism has slowed down and I need to watch what I am eating. I tried eating some salads for lunch, and I did not like them, it was too leafy for my liking. Eventually, I figured out that it is all about the texture and dressing for me. Keep reading for the recipe of a salad, that is healthy and tasty.
Ingredients for your healthy salad
- Salad greens/Mesclun salad
- cherry tomatoes
- cranberries
- pumpkin seeds
- walnuts
- Feta Cheese
you can adjust measurements to your liking there is no right or wrong in this salad. Hence no measurements
Dressing for your Healthy salad
- Olive oil – 3tbsp
- Apple cider vinegar- 2tbsp
- Dijon mustard -1tbsp
- Honey or Maple cyrup-1tbsp.
The general rule for dressing I follow is; 3 parts oil, 2 part vinegar and 1 part flavour. Feel free to experiment to find your sweet spot! Sir it nicely with a fork.

This salad is nutritionally packed with a wide range of essential vitamins, minerals, and other nutrients that it needs to function at its best. It comes with leafy greens, cherry tomatoes, healthy fats from nuts etc. The dressing is homemade, so you know what is going in to it and it is so tastier than any of your store brought dressings.
